Cake Foundation Level 2
2 Day Class
Beginners to Intermediate
January 23-24 2027
Full class description
Build a luxury two-tier cake from the first layer to the final flower. This hands-on workshop teaches the skills behind every elegant cake: a stable structure, perfectly smooth ganache, razor-sharp edges, and a finish that looks hand-painted. You’ll then crown it with sugar flowers you make yourself.
Taught by an international cake competition judge who has taught all over the world, this class begins with the basics, so you don’t need experience. If you already decorate, you’ll sharpen your technique and learn professional finishing.
What you’ll learn
Stack and layer your cake with confidence, with a stable two-tier structure that works as the foundation for any cake
Create perfectly smooth ganache with sharp, clean edges
Achieve rich, dark colors in your ganache for a dramatic finish
Stencil and paint your ganache to add pattern, depth, and a one-of-a-kind surface
Make your own edible glitter to add a custom shimmer
Create sugar ranunculus with soft, realistic petals
Arrange your flowers on the cake so the design looks balanced and natural
You’ll leave with
